You'll notice there is no dark chocolate needed for the brownies. You might be wondering how these brownies get their deep, dark chocolate flavor! This gorgeous, rich flavor comes from the combination of unsweetened cocoa powder and the two different sugars. There is quite a bit of unsweetened cocoa powder in these, giving structure and deep flavor. There is enough sugar in these for incredible moisture and mild sweetness, but there is a lot less sugar in comparison to other, sweeter brownies. This gives us the dark chocolate flavor you know and love without sacrificing moisture, structure, or ease!

The secret trick to brownie baking?
- Do not overmix and do not overbake.
Doing so will lead to dry, dense, fluffy brownies as opposed to our gooey, thick, rich brownies! Just as the dry ingredients start to incorporate into the wet ingredients, fold in the walnuts and chocolate chunks. Once the dry ingredients have just mixed in, STOP mixing!
When baking, a toothpick inserted into the center of the brownies will come out with batter. It should look like moist crumbs, not wet batter. All ovens are different, and all pans are different. In my 9 inch metal pan, 30 minutes is perfect for fudgy brownies. If using a glass pan, you will likely need a few minutes longer. In an 8 inch pan, you'll need about 5-7 minutes longer since the brownies are thicker!

- ¾ cup (165g) unsalted butter, melted
- ⅔ cup (160g) light brown sugar
- ⅔ cup (150g) granulated sugar
- 3 large eggs (150g), room temperature
- 2 teaspoons (8g) vanilla extract
- ¾ cup (105g) all purpose flour
- ⅔ cup (60g) unsweetened cocoa powder
- ½ teaspoon (4g) salt
- 1 ¼ cups chocolate chunks
- 1 ¼ cups chopped walnuts
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line a 9 inch square pan with parchment paper, and spray with cooking spray.
- In a large bowl, whisk light brown sugar, granulated sugar, and eggs together for 2 minutes. Beat aggressively until the mixture becomes pale and shiny. This creates the shiny, crinkly tops on the brownies and is incredibly important. You may use a hand mixer for this part if preferred.
- Add vanilla extract and melted butter to the egg mixture, stirring until combined.
- Stir in flour, unsweetened cocoa powder, and salt. Once the dry ingredients begin to incorporate, fold in the chocolate chunks and walnuts to prevent overmixing. Stir until just combined.
- Bake for 28-35 minutes. Begin checking at the 25 minute mark, as all ovens and pans are different. The tops of the brownies will look set, and a toothpick inserted into the center will come out with moist crumbs and a bit of batter. Overbaking will lead to dry brownies. Let brownies set for at least one hour before cutting and serving.
Notes
If baking in an 8 inch pan or glass pan, the brownies will need to bake longer.
