Softest Sprinkle Sugar Cookies

Softest Sprinkle Sugar Cookies are the softest, chewiest, most buttery, and most fun cookie around. These sugar cookies are rolled in rainbow sprinkles and baked to have slightly crispy edges. These are melt-in-your-mouth and SO easy to make!

After being sent home from school back in March due to COVID (tragic but necessary), the very first thing I did was order 7 pounds of rainbow sprinkles. Amidst a pandemic, the very FIRST thing I did was order rainbow sprinkles. If I was going to be cooped up for months, I was going to do it with sprinkles. Meet the very recipe that restarted this blog.

How To Make Softest Sprinkle Cookies

These cookies are made in just a few simple steps with just a few simple ingredients! It's wild to me that 8 ingredients create such irresistible cookies.

  1. Cream room temperature butter and granulated sugar together until light, smooth and creamy.
  2. Add in egg, egg yolk, and vanilla extract.
  3. Mix flour, salt, and baking powder into the batter.
  4. Refrigerate dough for 30 minutes.
  5. Roll dough into balls and roll balls in sprinkles.
  6. Bake cookies.

The Sprinkles

The sprinkles are the stars of the show. Every star of the show requires a few extra details to ensure perfection.

Sprinkle Type: I HIGHLY recommend using jimmies. Not only do they not bleed, like nonpareils do, but they actually add FLAVOR if you find the right ones. As a sprinkle connoisseur, the crunchy, hard jimmies do not deserve a place in my pantry. These cookies are called Softest Sprinkle Sugar Cookies for a reason. I would hope you can use soft, flavorful sprinkles. Here are the sprinkles I use.

Sprinkles Melting: These sprinkles will melt slightly in the oven. Though the cookie will be cool after 30 minutes or so, the sprinkles will not be fully set! That means that the sprinkles will spread or smush when you touch the cookies. If you're taking them somewhere and choose to package them up before the sprinkles have hardened, the sprinkles will smear everywhere. If you want the clean look that the cookies in my pictures have, let the sprinkles completely harden!

Sprinkles by Occasion: One of my favorite parts about these cookies is that they are SO versatile! They can SO easily be themed by switching up the sprinkle colors. Christmas, St. Patrick's Day, baby showers.... the opportunities are endless! Just try to stick to those soft jimmies, and you will be good to go!

Chilling and Baking Sugar Cookies

These cookies do require chill time. I dislike chilling as much as the next guy, but I promise you'll thank me for the chill time these cookies require. Well, your clean hands will thank me. This dough is STICKY. That's good and quite common with softer cookies, but it makes rolling them a huge mess. Plus, those soft cookies can SPREAD without chill time. Pop the bowl of dough in the fridge for 30 minutes, and you'll be good to go!

I love these because you can underbake them or overbake them, and they still taste wonderful. I prefer these with that soft crunch, but you could have them even more crunchy by cooking them for an extra two minutes, or you can make them ooey and gooey if you cook them for about a minute less.

Baking time will vary by oven, by size of cookies, and based on what consistency you want these cookies to be! As I've already stated, I wanted my cookies pretty soft with a bit of a crunch and a hint of a chew. For that, I had my 1 tablespoon cookies in for about 9-10 minutes. If you want them softer, I would look at them at 8 minutes. If you want them crunchier, I would check them at 11-12 minutes!

Please note that the cookies will continue to bake as they are sitting and cooling on the cookie sheet. They will set as they cool- I promise!

Storing and Freezing

These cookies last up to 5 days in an airtight container at room temperature! Please store properly. The longer these cookies are exposed to air without being covered, the more dried out they will become!

Baked cookies can be frozen in an airtight container or Ziploc bag for up to 4 months! You can freeze unbaked cookies too! I would recommend rolling the dough balls in sprinkles before freezing so that you can just pop the cookie dough in the oven straight from the freezer when you bake!

Description

Softest Sprinkle Sugar Cookies are the softest, chewiest, most buttery, and most fun cookie around. These sugar cookies are rolled in rainbow sprinkles and baked to have slightly crispy edges. These are melt-in-your-mouth and SO easy to make!


Ingredients

Scale
  • ½ cup unsalted butter, room temperature
  • ⅔ cup granulated sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups + 2 Tbsp all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup sprinkles

Instructions

  1. In a medium bowl, cream room temperature butter and granulated sugar together until smooth and creamy using a mixer. I mixed for about 3 minutes. Add in the egg and vanilla, and mix until combined. Scrape down the sides of the bowl as needed.
  2. Add flour, salt, and baking powder to the bowl. Make sure not to overmix. If dough is REALLY sticky, add an extra tablespoon to mixture.
  3. Place the bowl of batter in the fridge for 25-30 minutes. You want to be able to roll a tablespoon of the dough without it sticking to your hands. Stick it back in the fridge if it’s not ready yet!
  4. Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
  5. Remove dough from the fridge. Place ½ cup of sprinkles in a bowl. You may need more! Roll 1 tablespoon balls of dough in your hands before rolling them in the bowl of sprinkles. Make sure your balls are completely covered in sprinkles. Place the balls of dough 2 inches apart on cookie sheets.
  6. Bake for 8-10 minutes for soft cookies with a slight crunch on the outside. At the 4 minute mark, remove sheets from the oven to add more sprinkles to the center if needed. Place them back in the oven to finish baking. Let the cookies sit on baking sheets for 3-5 minutes before transferring them to a wire rack to completely cool. Sprinkles will be completely set after about an hour.
